Holistic Dining Experience
Everything is different in the Alchemist. It is said to be the most daring avant-garde restaurant of our time. And indeed, an evening in the futuristic realm of Rasmus Munk baffles and astounds. With the help of an investor, he has transformed an old factory building into a culinary experience. 13 million euros were invested. Dramatic advisers, sound designers and artists created a dreamlike visual design concept. In the dining room, guests sit at a winding marble table with a dome above them into which images are projected: Jellyfish, stars, raining flowers. In the Aperitif Lounge, a glass wine cellar stretches over three floors.
But the strong visual impact is not the focus of Munk’s design concept. He focuses on a holistic, integrated experience. His menu consists of about 40 courses that surprise, amuse and provoke. Served in a silicone skull, crackling fishbone of cod is served on a jawbone, an allusion to the plastic litter of the seas. Such messages are important to Munk. When developing his creations, the chef draws on the repertoire and equipment of the so-called molecular cuisine.
