Networkers and symbiotes 

Alexander Herrmann and his head chef as well as culinary director Tobias Bätz have created something very special in the Franconian town of Wirsberg. An incomparable network that symbiotically welds chefs and producers. Herrmann started with this concept, Bätz perfected it with the help of the ‘in-house product scout’ Jörg Joshi Oßwald. The network now includes almost 70 partners from farmers, fish farmers, craft beer brewers to tropical house operators. A beneficial community whose cohesion and exchange of experience is promoted by the boss through joint events. A community committed to quality; Producers who do not fit in, they sort out themselves. Some partners are so small that they can only bring a handful of goods. This demands flexibility from the kitchen. In times of abundance, supplies are created. “Why are we actually doing this?” asks Bätz rhetorically, “We have found that special products from special producers lead to more appreciation for our work.”
